Colcannon is a traditional Irish potato dish that’s been enjoyed for centuries. It’s usually made with potatoes mashed with cabbage or kale, and lots of butter or cream.
There are many, many variations that have been developed over the years to incorporate different flavors and ingredients, like leeks, bacon, chives, and garlic.
What you need:
- 4 large potatoes
- 3 tablespoons of (vegan) butter
- 2 tablespoons extra virgin olive oil
- 2 chopped cloves of garlic
- 1 leek, sliced in thin half moons
- 2 cups shredded
cabbage
- 1 cup of low-fat milk or non-dairy milk
- ½ cup water
- 2 scallions
- Finely chopped flat-leaf parsley
- Salt & pepper
How to make it:
- Boil the potatoes in a pot with water and one teaspoon of salt. Bring to a boil, reduce heat, and simmer until the potatoes are cooked through. Drain, let them cool, and peel.
- On a medium heat, add some butter and olive oil to the pan, then toss in the garlic and leeks to cook for 3 minutes.
- Add cabbage and stir well. Cook for another 4 minutes (or until the cabbage is softened).
- Add milk and water, and simmer.
- Add potatoes and stir. Mash the potatoes with a potato masher, and season as needed.
- Place it all into a bowl and top with a little wedge of butter, chopped scallions, and parsley.
- Serve warm and immediately.
